One Supervisor per 300 Guests at $150.00 per Supervisor.
One server per 25 Guests at $100.00 per Server.
Chefs (if needed) at $100.00 per Chef
Tax: 7% unless tax exempt
Gratuity: Minimum of 15%.




Options
Deduct $3.50 to omit Dessert or replace dessert with wedding cake at no charge.
Add $1.25 per hot or cold Hors D’ Oeuvre added.
Deduct $2.00 per person to use high-grade disposables rather than china.
Deduct $2.35 per person to omit Pork Loin Mojo or $5.00 to omit Fish.
Wedding Cake delivery fees are to be paid direct to Bakery.
A Whole Suckling Pig Presentation (≈30 pounds-feeds 30) add at $225.00.
Add Large Gulf Shrimp Cocktail with Cocktail Sauce and Lemon or 4 Butler Passed Hors d’ oeuvre for $4.50 per person.
Add Grilled Ham Steak with Pineapple at $2.35 per person or Sirloin Tip Kebobs with peppers and onions at $3.35 per person
